Softer in texture than most other types the orange roe pouches are salted pressed and desiccated for weeks until the bottarga glistens with a wax-like feel and appearance. While milder than other dried roes the brine flavor of mullet bottarga is still pronounced with a hint of bitterness that pairs well with the salt content.
